2 pounds Farm Stand® Klondike Rose potatoes
1/2 pound Shop 'n Save® bacon, chopped 1/2 medium Farm Stand® yellow onion, chopped - Shop 'n Save® salt and Shop 'n Save® black pepper
1. Scrub potatoes to remove any dirt; dry with clean paper towels. Pierce potatoes with fork in several spots.
2. Place potatoes on a microwaveable plate. Microwave (HIGH) 5-7 minutes, turning occasionally, until a fork can easily be inserted into center of potato. Let cool slightly; cut into 1-inch cubes. 3. Meanwhile, in large skillet over medium-high heat, cook bacon until slightly crispy; add in onions and potateos. Salt and pepper taste. Cook potatoes, turnning occasionally, allowing them to brown (about 10-15 minutes). 4. Taste and adjust salt and pepper.
