Blackened Catfish

A great quick and easy entrée.
1 (4.8 ounce) package Arctic Shores™ frozen catfish fillet, thawed
1 tablespoon Shop 'n Save® butter, melted
1 tablespoon blackened seasoning
1 tablespoon Shop 'n Save® vegetable oil
1 (10 ounce) can Carlita™ diced tomatoes with green chiles, drained
Pat fish dry with homelife™ paper towels. Brush fish with butter and rub with blackened seasoning. In a medium skillet, heat oil over hight heat. Sear fish on both sides (about 1 minute per side). Pour drained tomatoes next to fish; reduce heat and sauté tomatoes until fish flakes easily with a fork (about 5 minutes). Transfer tomatoes to a dinner plate and top with fish.
